Juan José Morán is a young Ecuadorian Chef and owner of La Pizarra and MORAN The Artisan Kitchen. Very passionate, he works under the philosophy of always giving prominence to local products and traditions. He has gone through kitchens such as Don Francis, Presidency of the Republic, Ecuadorian Scientific Station in Antarctica, Bocavaldivia, among others.

-200gr of arboreal rice
-150ml of dry sparkling wine or white wine (Sauvignon blanc)
-1/2 liter of vegetable broth
-10 gr of garlic
-80 gr onion leek
-1 sprig of thyme
-50 gr of cremini or portobello mushrooms
-20 gr of dry or fresh shitake
-10 gr of pine or porcini mushrooms
-60 gr of Pecorino or Parmesan cheese
-60 g of butter
-25ml of extra virgin olive oil
